Tart with apricots and almond custard

Below you will also find a simple recipe of the summer tart that is perfect for a summer picnic with friends and family and just dinners. Even the one who never cooked will be able to make it. And will love it with a ball of vanilla ice-cream on top.

Tart with apricots and almond custard (step by step recipe)

For a ring that is 24cm in diameter and 2cm high.


Shortbread dough:

  • 140g flour
  • 100g soft butter
  • 50g powdered sugar
  • 50g almond flour
  • 45g of egg yolk
  • 4g of baking powder


In the mixer bowl with spatula nozzle, mix soft butter, powdered sugar, and almond flour. When the powdered sugar dissolved and mass became even, add egg yolks, mix, and in the very end add flour with baking powder. Mix until smooth consistency, lay on the food film or in between parchment papers, roll out a bit and place into fridge for at least 4 hours.


After it cooled down, roll out the dough so it is big enough for the tart’s form and lay out into the form. Remove the excess and place into fridge for 30 minutes more.


Almond custard:

  • 50g soft butter
  • 50g sugar
  • 50g almond flour
  • 10g flour
  • 20g cream 33%
  • 1 egg
  • 20g pistachio praline (optionally)

Additionally: 15-20 apricots (cut into halves and remove the bone)


In the mixer bowl with spatula nozzle carefully mix soft butter, sugar, and praline. Add almond flour, then egg, cream, and in thievery end – wheat flour. When the custard is smooth, transfer it into a bag and place into fridge for 2 hours.


After it cooled down, transfer the custard into the tart’s base. Top with lots of apricots, powder with sugar and put into the oven to bake for about 40 minutes at 170C. Cool down and sprinkle with powdered sugar. Especially tasty if accompanied with a warm ball of vanilla ice-cream.
