Velvet Coating – An Elegant Way to Elevate Your Dessert

Velvet coating is a sophisticated technique that enhances the visual appeal of desserts. This method creates an attractive texture and can turn an ordinary dessert into a true work of art.


What Makes Velvet Coating Special?

Velvet coating is a beautiful way to decorate a finished dessert. It is made using a mixture of chocolate and vegetable oil, which is then applied to the dessert’s surface using specialized equipment. The most commonly used tool is a spray gun with a nozzle diameter of 2.5 to 3 mm.

Alternatively, you can use a pastry velvet spray, which comes in a special canister similar to a spray paint can. This packaging makes it very easy to apply, and one can is usually enough to cover approximately 4-5 standard-sized cakes.


How to Make a Velvet Coating Mixture

1. Prepare the Ingredients

You will need cocoa butter and chocolate in equal amounts (for a standard-sized cake, 55-60 grams is recommended). To achieve the best results, use high-quality professional pastry ingredients.

  • If you plan to color your velvet mixture, use white chocolate.
  • Standard types of chocolate will provide natural tones.
  • Use gel-based or fat-soluble food coloring for coloring.

2. Melt the Ingredients

You can melt the ingredients in a microwave or over a double boiler. Melt them separately because they have different melting points.

3. Prepare the Mixture

Mix the melted ingredients together and add food coloring if needed. A blender can be used for thorough mixing. The final mixture should be cooled to 35-40°C (95-104°F) before spraying. Once cooled, apply it immediately.

4. Prepare the Dessert

Chill the dessert beforehand. This ensures that the velvet coating adheres evenly and beautifully. Prepare a dedicated area for spraying—such as a cardboard box—to contain overspray. Keep in mind that cleaning up stray velvet droplets from unprotected surfaces can be difficult.

5. Apply the Velvet Coating

Fill the spray gun with the prepared mixture. Take the dessert out of the refrigerator and start spraying right away.

  • Spray from a distance of about 20 cm (8 inches).
  • Rotate the cake smoothly while spraying to ensure an even coating.
