What is inside the recipe collections

A Maru Expert recipe collection is a PDF built around one subject: the order of the steps with a photo of each stage, exact gram weights, yields and finished weights, and how long each bake keeps and where. The file lands in your inbox right after payment, opens on a phone and prints on ordinary A4.

the Napoleon collection, “7 Shades of Flavor” — seven readings of one cake: the classic vanilla one everybody grew up with, coffee and chocolate, poppy seed and sour cherry, and pairings of our own. Every stage, from the puff pastry to the assembly and the decor, is photographed step by step.

Classic Desserts — 11 recipes people order most for family celebrations: tiramisu, Esterhazy, Black Forest, Napoleon. It is put together for anyone who bakes to order: familiar flavours, a presentable finish and the assembly written out in full.

Family Recipe #1 — 20 everyday dishes rather than desserts: crepes Suzette, syrniki, soups, risotto, pasta and fish. Alongside the print version there is a separate one laid out for a phone screen.

A collection gives you the recipe and the technique, but no feedback: nobody looks at your photo and tells you why the cream split or the layers came out dense. If you want your work reviewed by a mentor and a certificate at the end, look at the online courses. The collections are written by Ekaterina Kurbatova, pastry chef and founder of the school, trained at Olivier Bajard’s International Pastry School in France.
