Powder or sheet gelatin
Gelatin is a universal thickener and stabiliser used across pastry work, and it comes in two forms: powder and sheets. There is no fundamental difference between them — what matters is the bloom strength, which determines how firmly the gelatin sets.
Finely milled powdered gelatin swells and dissolves faster and leaves no granules. Unlike coarser crystals, it will not leave unpleasant lumps in creams and mousses. Most shops sell gelatin of 180–200 bloom, but it is worth checking the figure with the manufacturer.
The blooming ratio
Powdered gelatin is soaked in cold water at a ratio of 1:5 — one gram of gelatin to five grams of water. For example, 20 g of gelatin is bloomed in 100 g of cold water.
The water must be genuinely cold: straight from the tap or chilled in the fridge beforehand.
Step by step
- Weigh out the gelatin and the water.
- Sprinkle the powder into the cold water and stir at once so no lumps form.
- Leave it to swell for 10–15 minutes, preferably in the fridge.
The bloomed gelatin mass keeps for up to 72 hours in the fridge. A useful trick: cut the set mass into cubes and add them straight to hot mixtures.
How to use bloomed gelatin
In hot mixtures such as a cream: add the gelatin cubes at no lower than 60 °C and whisk until fully dissolved.
In cold mixtures such as a cheesecake: melt the gelatin first, stir it into a small part of the cold mixture, and only then fold that back into the rest. This prevents lumps.
Can you freeze it
Yes. Desserts set with gelatin freeze and thaw without losing their texture.

What is the water to gelatin ratio
Five to six grams of cold water per gram of gelatin. Less water and the mass will not swell evenly; more will simply dilute the dessert.
Can you bloom gelatin in hot water
No. The outside seizes into lumps while the inside stays dry. Cold water first, heat only afterwards.
What can replace gelatin
Agar or pectin, but the amounts must be recalculated: agar is roughly three to four times stronger and sets at 40 °C rather than in the fridge.
